Roast: Medium light Body: Light, sweet Acidity: Balanced Notes: Lilac, lavender, spearmint, Gala apple If you were a fan of Counter Culture Coffee's Huapu roast, you will love Ritual Coffee Roasters' Organic Hama. This roast is definitely not your typical cup of joe; sweet, light, and herbal, these beans make for a smooth, airy mouth-feel that tastes similar to a mocha mixed with rosewater. Notes of lilac, lavender, and spearmint backed with tones of Gala apple and licorice make for a truly unique brew. Though refreshing to the palate, these Ethiopian varietals (Kurme, Wolisho, Dega) will bring to mind herbal tea rather than the traditional coffeehouse roast. These beans were collected by the Gedeo Zone's Hama Cooperative and harvested under the Yirgacheffe Coffee Farmers Cooperative Union, or YCFCU. They were grown at elevations between 1600-2400 meters, prepared in the traditional, world-famous Yirgacheffe washing method with a long underwater fermentation followed by a post-fermentation soak, and dried on raised beds and hand sorted to Grade 1 specifications.
