Though sourced from the heartland of Colombia's agricultural district, this roast from ReAnimator Coffee is much closer in resemblance to your traditional Ethiopian. The roast balances a light, airy body and bright, fruity tones, accentuated by a minty aroma. Like most light roasts, this one is complex and flavorful; however, we noticed an unpleasantly vinegar-like acidity that proved overwhelming to the palate. As acidity variations are often associated with brewing errors (overly high temperature, shortened extraction time), we brewed multiple samples to maximize accuracy and found the same result every time. For fans of a sharp sourness to the cup, ReAnimator's Colombian Cauca roast is highly recommended.
